Another Italian classic, 'tricolore' means three colours in Italian, which represents the three colours of the Italian flag. This recipe is the epitome of summer food for me, and sinfully easy to prepare. The main thing here is to try and make sure you can get high quality ingredients, as there's so little involved here that there's really nowhere to hide otherwise...
What's the A to V?
The tomatoes are a great source of vitamins C, B9 (folate) and K, whilst the cheese here is rich in calcium, phosphorus, vitamin D and vitamin A. The avocado meanwhile, is a good source of vitamins B5, B9 and potassium.
Ingredients (serves 2 to 4):
4 large tomatoes, and 150g of smaller cherry tomatoes
125g of mozzarella cheese (if you can get it, buffalo mozzarella is hands down the best for this)
1 avocado, sliced
A generous handful of basil leaves
3 tbsps of olive oil
1 tbsp of balsamic vinegar (or balsamic glaze)
Salt and pepper to season
