I've never been a fan of those bottled salad dressings - not only do they hang about in the fridge for all of eternity, but they all have that same over-vinegar-ed, sweet flavour. This dressing is simple to make and is great drizzled on top of most things. It obviously goes well with salad, but is also lovely with white meat and fish, or with roast veggies.
What's the A to V?
Lemons are one of the best natural sources of vitamin C out there, with the olive oil here a good source of vitamin E. The mustard here is rich in sodium.
Ingredients (serves 4):
1/2 a lemon
1 generous tsp of mustard
1.5 tbsp of olive oil
Pinch of salt
Generous grind of pepper
